Form into a boule. Place on parchment-lined sheet or loaf pan. Cover and rest 20 min until doubled.

Preheat oven to 400°F (205°C). Make 2–3 shallow diagonal cuts. Bake 45–50 min with steam (small bowl of water or ice in oven). ool completely 1 h before slicing.
